In 1987, when mass-produced bread was beginning to dominate Norwegian supermarket shelves, our founder Olav Eriksen made an unusual decision. Rather than following the trend toward industrialisation, he chose to do the opposite—opening a small bakery committed to the methods his grandmother had taught him on the family farm in Gudbrandsdalen.
Those early years were challenging. Customers had grown accustomed to soft, uniform loaves that stayed artificially fresh for weeks. Our crusty, dense breads with their irregular shapes required explanation. Olav spent countless mornings at the market stall, offering samples and describing the difference between real fermentation and commercial shortcuts.
Slowly, the tide turned. A generation of Norwegians began questioning what they had lost in the rush toward convenience. Food writers discovered our tiny shop tucked behind Mathallen. Chefs started requesting our sourdough for their restaurants. By the late 1990s, weekend queues stretched around the corner.
When Olav's daughter Maren joined the business in 2005, she brought formal training from baking schools in France and Germany. Her innovations—introducing laminated pastries, experimenting with ancient grain varieties, establishing relationships with organic farmers—expanded our offerings without compromising the principles her father had established.
We allow our doughs to ferment naturally, sometimes for three days or more. This patience develops flavours and textures that rushed methods cannot achieve. We measure success in taste, not output volume.
Nearly all our ingredients travel from Norwegian farms to our ovens. We know the growers by name. This traceability ensures quality and supports agricultural traditions that might otherwise disappear.
We happily explain every step of our process to anyone who asks. There are no proprietary secrets or hidden additives—just flour, water, salt, and time applied with care.
Our team combines experienced bakers who trained under Olav himself with younger apprentices eager to learn traditional methods. What unites everyone is a genuine passion for the craft and a willingness to start work before dawn.

Today, as the third generation of the Eriksen family prepares to take an active role, we remain committed to the vision that started in that small rented space nearly four decades ago. The equipment has improved, the recipes have evolved, but the fundamental belief persists: good bread requires good ingredients, careful technique, and above all, patience.
We continue to experiment—currently exploring heritage barley varieties and developing naturally sweetened pastries using only fruit and honey. Yet every innovation is tested against a simple question: would Olav recognise this as worthy of the Bakkerij Noord name?
