First, we refresh our sourdough starter with fresh flour and water, allowing it to peak overnight. The following morning, we mix the main dough and let it rest for an hour before the first fold. Over the next eight hours, we perform a series of gentle stretches that develop gluten structure without mechanical mixing.
By evening, the shaped loaves enter our cold retarding chamber, where they slowly ferment until the early morning bake. This extended process breaks down complex sugars and proteins, making the bread easier to digest while creating remarkable depth of flavour.
